Cara Cara Orange & Baby Arugula salad

BABY ARUGULA  & CARA CARA ORANGE SALAD WITH GRAINY MUSTARD VINAIGRETTE
serves6
1 5oz package baby arugula
1/4C feta cheese crumbled
1/4C golden raisins
3 Cara Cara navel oranges peeled & cut into slices
1/2 red onion, thinly sliced
1/4C pine nuts 
vinaigrette
1T grainy mustard
1t honey
1T apple cider vinegar
1/4C olive oil
Heat a fry pan until warm.  Add the pine nuts and cook for about 1 minute or until they 
start turning golden (be careful not to burn).
 In a small bowl make the vinaigrette: 
add the mustard, honey, cider vinegar, salt & pepper.
with a fork, slowly whisk in the olive oil, until creamy and all the oil is incorporated.
In a large bowl add the arugula, feta cheese golden raisins, sliced oranges, red onion, and pine nuts.
Spoon 1/2 the vinaigrette into the salad. Toss, toss, toss (I like to do this with my hands) taste the salad and add more dressing as need. adjust seasoning if needed. Serve

winter time is the best time to eat & drink, & cook with citrus fruits.  I love honeybell oranges, blood oranges, meyer lemons.  look for the at large emporiums like costco and try them.  So delicious
